V-79-57344-53296 - what now??

So after all the work I've put into getting Backup Exec 2012 to work, it seems I've finally hit a wall:

V-79-57344-53296 - Der virtuelle Computer enthält mindestens eine Festplatte, die mindestens 2 TB groß ist. Granular Recovery Technology (GRT) wird auf virtuellen Computern mit solchen Festplatten nicht unterstützt. Deaktivieren Sie GRT für diesen Computer und wiederholen Sie den Backup-Auftrag.

In English, according to http://www.symantec.com/docs/TECH212483:

V-79-57344-53296 - The virtual machine contains at least one disk that is 2 TB or larger. Granular Recovery Technology (GRT) is not supported for virtual
machines with disks that are 2 TB or larger. Disable GRT for this virtual machine, and then try the backup job again.

Put aside that such a serious limitation would have warranted a big fat warning up front instead of hitting me over the head with it when everything's finished. Put aside the misleading recommendation to disable GRT "for this virtual machine" when Backup Exec 2012 doesn't even allow that because the GRT option can only be enabled or disabled for the entire job. I don't want to whine. I want a solution.

This concerns our central company file server. Yes, it is virtualized. Yes, the disk is 2 TB in size. Yes, that is deliberate we do anticipate storing that amount of data. And yes, we do need the ability to restore individual files. It is not an option to restore all of 2 TB every time we need something restored.

What is Symantec's proposed solution for that scenario?
